Traditional Risotto

Risotto is all about patience and technique. Here’s a basic recipe that never fails.

Ingredients

  • Arborio rice
  • Vegetable or chicken stock (warm)
  • Shallots and garlic
  • White wine
  • Parmesan and butter

Method

  1. sauté shallots and garlic.
  2. Toast the rice until translucent at the edges.
  3. Deglaze with wine.
  4. Add stock one ladle at a time, stirring constantly.
  5. Finish with butter and parmesan.
