Traditional Risotto
Risotto is all about patience and technique. Here’s a basic recipe that never fails.
Ingredients
- Arborio rice
- Vegetable or chicken stock (warm)
- Shallots and garlic
- White wine
- Parmesan and butter
Method
- sauté shallots and garlic.
- Toast the rice until translucent at the edges.
- Deglaze with wine.
- Add stock one ladle at a time, stirring constantly.
- Finish with butter and parmesan.
